Cultivar or Varietal?
There is a fundamental distinction between cultivar and varietal. A cultivar is a type of varietal that is, well, cultivated. It's the result therefore of human manipulation. Most specialty coffees are cultivated, although not all. So both designations are often used interchangeably. To be honest, we like the term cultivar, because we can use it in either English or French, it's convenient and anyway we're not difficult with words!
